Is There Such a Thing as Too Much Pumpkin?

Around the Terlap house, the answer is definitely a big, fat,  “NO WAY!”  : )

When I spotted those yummy looking cookies peeking out those adorable bags and I just knew I had to give them a go.  So I whipped up a batch, (some glazed and some plain [for Maddie]), and waited for the family to come on home and give me some feedback.

The definitive answer:  8 enthusiastic thumbs up!  Woo-Hoo!

Iced Pumpkin Cookies (from

2 1/2 C all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
2 tsps. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. salt
1/2 C butter, softened
1 1/2 C sugar
1 C canned pumpkin puree
1 egg
1 tsp. vanilla extract

2 C confectioners’ sugar
3 TBL milk
1 TBL melted butter
1 tsp. vanilla extract

Preheat oven to 350 degrees.  Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt;  set aside.  In a medium bowl, cream together the 1/2 C butter and white sugar.  Add pumpkin, egg, and 1 tsp. vanilla to butter mixture, and beat until creamy.  Mix in dry ingredients.  Drop on cookie sheet;  flatten slightly.  Bake for 15-20 minutes in the preheated oven.  Cool cookies, then drizzle glaze with fork. 

To make glaze:  combine confectioners’ sugar, milk, 1 TBL melted butter, and 1 tsp. vanilla.  Add milk as needed, to achieve drizzling consistency.
